I was wondering if anyone could tell me the difference between a 350 and a 383 Stroker?

    Exactly 33 cui.

Build from another crankshaft with a longer stroke (That's why "stroker") and mostly an overbore from .030 over stock.

Both use a 350 block. The 383 is bored .030" oversize and uses the crankshaft from a 400 increasing the stroke from 3.48" up to 3.75", hence the term "stroker".
