I was wondering if anyone could tell me the difference between a 350 and a 383 Stroker?

Exactly 33 cui.
Build from another crankshaft with a longer stroke (That's why "stroker") and mostly an overbore from .030 over stock.Frank

Both use a 350 block. The 383 is bored .030" oversize and uses the crankshaft from a 400 increasing the stroke from 3.48" up to 3.75", hence the term "stroker".Jim

also Gm makes a 3.800 inch stroke for a standard 4.0 in bore also makes 383....
Great to see your new post, Mike, and great to see CHR up and running again after several days of the Hmmm, can't reach this page.... Also good that you found an easy solution to your storage/access...
