I know of many Hemi's that have been bored .125 (1/8") it depends on the motor.
But I also have seen motors that were junked because of being bored to much, or need the water jacket to be filled.

Anyone can cut one up, but! only some can put it back together looking cool!
Steel is real, anyone can get a glass one.

Smokey Yunick said you need 0.130" of cylinder wall after boring/honing.

I have heard of guys going .085 on the non thrust walls in the thin spots in a few bores and using a half fill with decent sucess..... now how much flex and loss of hp ...who knows ,probably some for sure.
