A good place to see the process of building a 33-34 Ford is http://www.project33.com/ . A highboy coupe is similar to a highboy roadster, with the exception of the roof.
I have two 33-34 fords, a glass roadster and steel 3 window coupe, and I prefer the swoopier body style. I do believe though, that a 32 would be slightly easier for a first time builder, due to a simpler body design.
