My mini HotRod...
Here are some pictures of my mini hotrod that I built from scratch. It should be ready for it's first tire-burn-up-test in a few weeks

I just hope I don't twist up my rear axle like a pipe cleaner when I pop the clutch at 11K RPM

I installed the dash + new wiring harness tonight...
I installed the dash + engine on/off, key-swtich, and engine start button installed along with an oil presure light, and digital gear position indicator (1-2-3-4-5):

Digital gear position indicator...
There is a 7-segment display on the dash which tells you what gear you're currently in (1-2-3-4-5) and when I'm in Neutral, a bright green Neutral lights up on the dash. (Can you see I'm in 1st gear?) A red Oil pressure light, and my Tach+spedo back-lighting for night driving

I'm assuming the bike you used had 34K on it? What year was it? Being you have all the wiring for a taillight and turnsignals and a headlight, why don't you buy a set of 12" or 13" lawnmower or other wheel that would work and mount DOT legal tires on them and get it regestered with a hombuilt registration, you would need at least a lap seatbelt if you did. A Carlisal Turf saver lawn mower tire might be Dot legal. The dash is cool with the shift indicator but your Speedometer is not accurate, that will need to be recalibrated or the speedo drive gear in the trans like on a car ( older ) is and you just change the speedo drive gear and it ajust's the speedometer, right now it's going to read way faster than actual unless, you get a larger rear sprocket to match the original rear tire speed ( when on the bike ), and match the final drive ratio of the original bike. That may be the only way to go because they may not make speedo drive gears for your application, you could also just have someone drive a car w/ accurate speedo next to you, and then get the cart going so the speedo reads like 55 and then stop and ask them what the reading on there speedo was and use that number to go by and you will be able to add or subtract depending on the Mph the car went and the reading of your speedometer.You don't know what you've got til it's gone

It was a 1979 GS750. The bike was working great before I disassembled it.
I re-wired everything using my own custom wiring harness. I didn't wire up any lights except the Enging Oil pressure, Gear indicators, and backlights for the dash. The Spedo is not connected right now. I would run the spedo cable off the rear axle and calibrate the gear ratio so I'd have a correct MPH reading. Normally, this is run off the GS750's front wheel. I'm not going to bother with the Spedo, but I will install the TACH cable. I'm just looking for a longer one. The original TACH cable on the GS750 is only 30 inches or so and I need about 90 inches.
I would design/build something completely different for driving on the roads -- this is intended strictly for racing.

I personally won't be going anywhere near the top speed. I know the top speed they give the GS750 bike is 130 MPH, but that must just be because it redlines in 5th gear. I had a custom 28 tooth #630 chain sproket made so I'm probably geared a little lower (original rear spocket was 41 tooth), so your 120 might be right on! I'd say 100 mph is probably the top speed because of all of the extra rubber I have on the ground (drag) -- but who knows. Maybe I can find a dyno that will let me wind it up on.
I don't plan on going very fast because I don't trust my welding job yet. I don't have any welding inspection equipment, or the experience to insure all my frame welds have proper penetration, etc. I've done a lot of welding, but this is the first welding job that prevents me from road rash -- hopefully I did a good enough job.

Get a cable off a larger bike, if not that, splice 2 togther with some kind of conector/mount mounted halfway and attached to the frame, of course, only if you cannot find a longer 1.
