I am looking at buying those AFS sanding blocks, and am wondering if I could use them for sanding clear out. I've been looking all over for longer sheets, or even rolls of finer grits, such as 800 or 1000 that could be used on a 21"+ block. Im not sure if anyone makes paper that would work for this or not. Any help would really be appreciated! Thanks in advance!

By the time you get to the point of sanding the clear, the body is should already be straight, and you won't get much benefit from using a "long board" sanding techinique. You won't be removing more than a few thousandths of paint film, just enough to remove any dust or ogange peel. At this point, a medium soft block 6, or maybe 10 inches is all you need. I use a standard size that I can wrap half sheets of WD paper around.

Your long board sanding should be over by the time you start shooting color. If it isn't, it's too late, and you will just be trying to use your color coats as filler, which can lead to problems.

I agree, when you are to the color sanding and buffing portion, you can even use your hand with 1500 then go over it again with 2000 by hand, then move into your cutting compound, buffing compound, and then polishing compound.
