Ok, I am going to try and help on this one, I am assuming Minottis is out of business. I have a Wild Rod (out of business) and was left with the same dilemma you have, first off I bet that Minotti's did not make there own glass so maybe the manufacturer is still in business, probably so since they couldn't make their entire companies income on only their glass so if you can find out who it was the problem is solved. My wild rod has a DOT stamp on it but no manufacturer, but maybe contacting one of the other fiberglass body manufacturers that use custom curved glass can lead you down the right path. Try https://www.vintageglass.com/ and their curved glass search they have maybe they can find it.
Next thing was when I installed my windows I made a cardboard pattern of all glass, yeah it doesn't have the curve but I laid my windshield on a S-10's and found I could possibly cut one from the center if ever needed, true its laminated but I think the video Pete Hagan made at Cut down a Windshield will even work with tempered safety glass as its not scored and snapped (can't do that on tempered) or maybe it could be water jetted also?? but if you find all else is lost I would try and get a pattern made and find a larger piece of glass to attempt to cut one out of, worst case scenario is you will have to wait till a Minottis car with the same windows is wrecked and you can grab the glass but it may be a long wait
Why is mine so big and yours so small, Chrysler FirePower
