Ok well I am new to this where does the shim for the pinion go in-between the baring and the pinion?

yup, right where you have the arrow. Make sure you use a new crush sleeve, too. The correct setting for the pinion depth should be engraved on the gear end of the pinion.

I have found that getting a used gearset perfect can be difficult. You should be able to get the contact patch out a little more. What Dave said.
Also in a pinch I have added a shim to get more crush on a crush sleeve. I think there might even be a crush sleeve eliminator. We made our own spacer on 9 inch Fords and set the preload with shims, a method I like much better.

Your BB Chevy Engine will turn that 7.5" GM Rear end into Dust . Do not do any Burn outs . I built one of the 7.5" Rear ends with a 7 5/8" Z-28 Posi unit With the HD Axles it is about as strong as you can make a 7.5" Rear end . But the One I am going to Run in my 1983 355 Monte Carlo is a 8.5" 1987 442 Rear end with a 3.73 Posi .

You can also buy a 9 inch Ford to bolt right in. I think it is more of a dirt car thing so you could probably look in one of the stock car magazines for a supplier. The early Bronco rear end is a nice width for those cars if you like to do your own mods.
If you live in an area where they race stock cars it can be hard to find a metric Monte with a rear axle or upper A arm left on it.lol

Yeah I would love to get my hands on a 8.5" but there few and far around here and i have a lock of money. As for the ford 9" I can not justify the money spending on it. so i am tring to make this 7.5 work right now.

and it is funny my frend has an 86 442 and some guy riped out the 8.5" and installed a 7.5 he was so pissed of when i pointed that out heh
